Spinach Bacon and Avocado Omelet w/Paleo Bread

For a Paleo follower, we have a healthy omelet, made with local eggs and spinach… We have some tasty bacon, and a slice of the best bread around – Paleo Bread!  Made without grains, gluten, dairy, GMO’s, soy, and tastes great… Plus, it’s low in carbs, calories, and has protein and fiber to keep you full and energized!  Julian Bakery makes sure you that are getting bread that not only tastes delicious, either in coconut or almond, but doesn’t spike your blood sugar levels, keeping inflammation down, which is exactly what we are trying to avoid by going Paleo.

So Rachel made this wonderful breakfast with a couple eggs, some sautéed spinach, and bacon, cooked in Paleo Butter, which is one of the healthiest butters around.  Or should I say ghee?  Either way, it’s packed with CLA, vitamins A, D, and K2, and tastes great not only on, but in meals!  We cook with it all the time, and I feel pretty cool that we are getting more nutrients than we would with regular butter.   And it comes from cows that were fed what they enjoy, and should be, eating…. Grass!

Ingredients:

• 2 local eggs

• 1 tsp Paleo Butter

• hand full of spinach

• 1 slices coconut Paleo Bread

• Organic Grass-Fed Cheddar cheese  (Grass-Fed Cows Year Round)

• 2 slices nitrate free organic bacon

• Sea salt and black pepper to taste

Directions:

1)      Melt Paleo Butter in frying pan

2)      Sauté spinach, then set aside

3)      Cook bacon, or reheat if you have it previously made

4)      Melt more Paleo Butter in frying pan

5)      Cook eggs with spinach as you would make an omelet

6)      Add bacon and cheddar when omelet is almost done

7)      Add Sea Salt and black pepper to taste

• 15 minutes

Cook Time:

• 10 minutes

Like I said, it was mmm mmm good!!!!!!!  With great flavors from the bacon and some cheddar cheese, along with healthy fats in the eggs and in the coconut Paleo Bread and Paleo Butter, and more vitamins in the spinach, this was a wonderful way to start the day.  Plus another dab of Paleo Butter on the Paleo Bread to bring out the flavor, it makes me crave lunch already!!!
