Primal Breakfast Sandwich w/Hollandaise & Paleo Bread
After seeing bacon and eggs images yesterday, I had to create a new Primalicious meal with lots of healthy fats dripping all over the place, and no nasty “whole hearty grains” to spike your blood sugar and insulin levels. So, let’s get to business…. Here lies this morning’s sandwich made with almond Paleo Bread™, two local eggs, four strips of local bacon, escarole, tomato, avocado, and finished with a freshly made Paleo Hollandaise sauce. Here’s the sauce recipe, this healthy beast was the perfect way to start my Monday! Have a great day everyone!
The hollandaise sauce: 1/2 cup grass-fed butter, 3 egg yolks, 1 Tbsp lemon juice, 1/2 tsp mustard powder, a dash of rosemary.
Place egg yolks in blender with the lemon juice, mustard and rosemary, turn blender on high speed for 5 seconds to blend. Melt butter in microwave or on stove until almost boiling. Turn blender back on gradually pour in butter in a drizzle. It will only take 20 or 30 seconds to come together.
