Pineapple and Pistachio Chicken Salad

 Ever since I was a little girl, I have always disliked any type of chicken salad or tuna salad or potato salad.  Maybe it’s the mayonnaise that most people use to make those dishes or the mushy consistency, as I’m quite sensitive to “mushy” consistencies.  Nevertheless, I have NEVER liked eating anything that has salad in the name that’s not actually a green salad. 

 When your mother in law is in town and has a reputation for being an amazing cook, you don’t question her suggestions.  So she said that we should make leftover chicken salad for lunch one day.  She told me what we could put in it and made suggestions as to how to prepare it.  I was VERY hesitant to the idea but figured that she probably knows best since she always has great ideas. 

 So between the two of us trying to make it paleo and communicate to each other in Spanglish, we created this fresh, crisp and refreshing chicken salad that I really enjoyed!  For me it’s all about having some crunch in it so that it’s not mushy and also not using mayonnaise, check and check!

 You can really use any type of nut for the “crunch” in this recipe but I happened to be on a pistachio kick but I think almonds would be delicious in the meal as well.  The pineapple is quite a surprising flavor that without tasting the amazingness of this you may turn your nose up to it but man is it fresh and a perfect addition!  It serves as a perfect “cement” for the chicken salad instead of using mayonnaise.  You very well could use some type of paleo mayonnaise but try out the pineapple in it, you won’t be disappointed. 

 Serves 2 (depending on how much chicken you use)

 Ingredients

 ½ lb. or so of cooked chicken (I prefer using leftover rotisserie chicken), broken up

 1/8 c. shelled pistachios, chopped

 5 or so 1” pieces of pineapple, smashed down to a paste

 2-3 c. of mixed greens salad (optional)

 2-4 pieces of toasted Julian Bakery Almond Paleo bread  

 Directions

  1. Combine the chicken, pistachios and pineapple and toss together

 2.  Place on a salad or bread and ENJOY!
