Paleo Oven Crusted Onion Rings with Paleo Bread™ Almond

Ingredients: (Gluten Free & Grain Free Paleo Recipe)

 1 medium to large sweet onion, sliced into 1/4″ rings

2 organic cage free eggs (or 1/2 cup egg substitute)

3 tablespoons almond milk

2 – 3 slices Paleo Bread-Almond, toasted until very crispy

1/2 teaspoon organic onion powder

1/2 teaspoon paprika (or enough to color the Paleo Bread-Almond crumbs)

1/2 teaspoon sea salt, or to taste

1/2 teaspoon freshly ground black pepper, or to taste

Olive oil

 Directions:

Preheat oven to 375 degrees.  Line a cookie sheet with foil and brush lightly with about 1 to 2 tablespoons of olive oil.  In a medium shallow bowl, beat eggs and cream or almond milk together; season egg wash with salt and pepper to taste.  Add the sliced onion rings to the egg mixture; toss and set aside and let them soak in it a bit while you make the bread crumb mixture.

In a small food processor, tear the toasted and crisped Paleo Bread-Almond into pieces and place into the processor.  Pulse until pulverized into a fine bread crumb mixture.  The bread crumbs have to be thoroughly dry to stick to the onion rings.  If they need to be dried out further, spread in a dry non-stick skillet on medium heat for a few minutes, tossing until dry, being careful not to brown them.

 In a shallow bowl or plate, mix Paleo Bread-Almond bread crumbs, salt and pepper, to taste, onion powder and paprika together; mix well until thoroughly combined. 

Take onion rings out, one or two at a time and place in the bread crumb mixture, pressing and turning over with a fork until well coated on both sides.  Place on a lightly oiled foil covered baking sheet in a single layer, careful not to touch each other.  Place in oven and bake 7-8 minutes; flip and continue baking another 7-8 minutes or until golden brown and done.  Remove from oven and sprinkle with salt, if desired.  Serve immediately.
