Paleo Bacon Eggs Chives & Paleo Bread™ Toast

Morning everyone!  This is Dan from with another breakfast option for you…  Bacon and eggs, with avocado and chive toast.  If you haven’t tried Julian Bakery’s Paleo Bread, you need to!!!   And with some healthy fats from the almond bread and avocado, it’s super healthy for you!   This breakfast isn’t mine to be honest; it’s actually for my wife who isn’t feeling all that hot today…  It seems like a lot of people are coming up with something this time of year, so hopefully this meal cheers her up and helps her feel better.  I mean seriously, who doesn’t feel better after eating some bacon! 

What I did was scramble three eggs with some grass-fed butter, along with some salt and pepper.  Meanwhile, bacon is cooking, and making my house smell divine!!!   Almond Paleo Bread is in the toaster oven, getting ready to meet up with some sliced avocado and chopped chives.  Once the eggs and bacon are complete, they get plated, along with the toast with greens.


3 organic cage free eggs

2 slices of organic uncured bacon

1 slice Paleo Bread™ – Coconut or Almond, toasted

½ avocado

Chopped chives

Organic grass-fed Butter


Chop chives and slice avocado, set aside.

Cook bacon to your liking, some (like me) like to slow cook it for over an hour.  Some cook it up in a few minutes. 

Cook eggs in frying pan with butter, or whatever you prefer if butter isn’t your first choice.  Add salt and pepper to taste.

Toast Paleo Bread™ – Coconut or Almond, adding sliced avocado and chopped chives.

When all is complete, assemble on plate and serve.
